Apicius International School of Hospitality at FUA is the first institute to receive the World Association of Chefs’ Societies recognition for quality culinary education in Italy. Worldchefs is an organization dedicated to improving and maintaining culinary standards through education, training and professional development. It has a global network of chefs which includes 100 official chefs’ associations as members. WCCE is the recognition that Apicius chef faculty members Simone De Castro, Massimo Bocus, and Andrea Trapani obtained as certified culinary educators. 

Apicius had already been offering the Fast Track for the Commis Chef upon completion of the 2-year culinary arts career program. As of 2018, Apicius culinary arts graduates of the 1-year Master in Italian Cuisine career program will be eligible to apply via Fast Track for the WACS Certified Chef de Partie level. Apicius is the first and the only institution in Europe and one of three institutions in the world to offer this status.

Apicius is recognized by WACS for offering a culinary and pastry program which meets or exceeds the global standards for quality culinary education. Apicius has a unique approach to food studies by incorporating the context of the city and country into hospitality education. Apicius strives to expose students to the unique experience of being involved with the local Italian community. When the students leave the program they have a deep understanding of the city, art, culture and population to carry with them throughout their careers.
