Apicius graduate-level studies in organizational management are a part of FUA’s School of Graduate Studies.

Apicius Culinary Arts Career Program graduates have the opportunity to automatically qualify for WACS fast track "gold" status.

WACS Professional Chef Certification Level

Thanks to Apicius' WACS certification for quality culinary education, graduates from the culinary program are eligible to apply for the WACS Certified Professional Cook (Commis Chef) level.

Eligibility

Apicius culinary graduates who have successfully completed their program after May 17, 2014 automatically qualify for the fast track "gold" status. Future graduates must submit the WACS application within five years of program completion.

How to Apply

The following instructions are provided by WACS:

  • Have a scanned copy of your certificate ready as you will need to upload it as part of the fast track application process
  • Go to the certification scheme website and select the 'Professional Cook (Commis Chef)' level (red tab)
  • Make an application and pay the application fee
  • Once your application has been processed, you will be issued with a Learning 
Assistant account
  • Follow the 'Joining instructions to fast track 'gold' applications' which you have received from your school. This brief guide will show you how to log into Learning Assistant and download your guide to the application process
  • Download the 'Candidate guide to fast track 'gold' applications' and follow the step-by-step instructions on what you need to do next
  • Follow the instructions in order to make your application as easy as possible

About WACS

The World Association of Chefs' Societies was founded at the Sorbonne in 1928. Currently WACS' global network has 100 chefs' associations and over 10 million professional chefs internationally. WACS launched the first global culinary certification in the world for culinary professionals who can apply for nine distinct titles within the culinary certification scheme. The association is non-political and its mission is based on setting global culinary standards through education and professional development.

APICIUS reinterprets the concept of hospitality and tourism in the international destination of Florence, where the cityscape is teeming with traditional and contemporary structures sought by people from all over the world. Hospitality should and must be enhanced by the local culture of a city, and our position and interaction with the city of Florence has the goal of culturally educating those who visit through the hospitality industry.
